Semolina Sweet

Indian Dessert Recipes taste great. Some of them are very easy to make. But some will take hours.

Here is a very simple one: Semolina Sweet

Roast semolina in ghee, in medium heat. It would take at least 20 minutes for the semolina to turn light brown. You will also get a nice smell of roasted semolina. The flame should be low, otherwise semolina may not get evenly roasted or may get burnt. Add water and cook. Ensure that lumps are not formed. Add sugar and keep stirring. Add a spoonful of ghee periodically and keep stirring for 10mts. Add saffron and cardamom powder and mix well. The dish will last for three days without refrigeration.

Rangoo: Sounds like a great desert, but I need to know more. Firstly, what is semolina, ghee. Secondly, how much of how much of those ingredients are used. Thank your mother for me!

Semolina is coarsly grounded wheat, according to Wikipedia. In India we use it regularly for a variety of recipes.

Ghee is clarified butter. You just heat butter and get ghee.

1. Semolina 250 gm

2. sugar 250 gm

3. ghee 150 gm

4. water 250 gm

5. cashew nut 25 gm

6. almond 25 gm

7. raisins 25 gm

8. saffron 0.20 gm

9. cardamom 10 gm

You can make a lesser quantity, then proportionately all the ingredients have to be taken in appropriate quantities.

If you come to india, I will treat you to "Kesari Bath" or Semolina Sweet :) How about that?

There is nothing like Indian food. And many Indian women spend a lot of time in the kitchen, even today.

Here is an "Instant Porridge"

When we have unannounced guests and we need a porridge in a hurry, we prepare this.

Roast chick pea powder in ghee, clarified butter, for two minutes, add milk and sugar. Garnish with cashew nuts and almonds.

The consistancy of Instant Porridge will be similar to a soup.

In most of the porridges you garnish with cardomom, saffron, cashew nuts and almond.

Instant Porridge Ingredients

1. milk 500 gm

2. Chickpea powder 2 table spoons

3. sugar 150 gm

4. cashew nut 25 gm

5. almond 25 gm

6. raisin 25 gm

7. saffron 0.10 gm

8. cardamom 10 gm
